                      ROAST BEEF SANDWICH PRINT

TOOLS YOU WILL NEED:  1 small bowl, 1 large bowl, mixing spoons,

 knife for cutting & for spreading

INGREDIENTS:

  • 4 Tbsp sour cream (regular or light)
  • 2 Tbsp mayonnaise
  • 1 Tbsp plus 2 tsp prepared horseradish
  • 4 Kaiser roll or other sandwich rolls of choice
  • 1 cup baby spinach, chopped
  • 1/4 cup shredded red cabbage
  • 12 Slices roast beef (2-3 oz per sandwich), deli or left over roast
  • Salt & pepper to taste
  • 3/4 cup roasted red bell peppers, drained
  • Thinly sliced onion, optional

DIRECTIONS:  Combine sour cream, mayonnaise & horseradish in a

 small bowl, mixing well.  Combine spinach, cabbage mixing well. Cut

 rolls in half & spread each with the horseradish sauce.  Place layers of

 roast beef, bell peppers, spinach mixture & top with onions on half of

the rolls, top with the other half of the roll.

SERVINGS:  4                                    TIME:  20 minutes

SERVING TIPS:  Serve with half of each sandwich wrapped in a napkin.
