TOOLS YOU WILL NEED:  Large bowl (for dates mixture), small bowl

(for topping mixture), large bowl (for dry ingredients), flour sifter, mixing

spoons, 9-inch cake pan, small sauce pan, measuring cups & spoons.

INGREDIENTS:

  • 1 1/2 cups chopped dates
  • 1 cup boiling water
  • 1 tsp baking soda
  • 1 cup sugar
  • 1/4 cup butter
  • 1 egg
  • 1 1/2 cup all purpose flour
  • 1/2 tsp baking powder
  • 1/2 cup chopped nuts
  • 1 tsp vanilla

TOPPING:

  • 1/3 cup brown sugar, packed
  • 1/3 cup cream
  • 2 Tbsp butter

DIRECTIONS:  Mix dates & boiling water, add the baking soda.  Stir to

dissolve then set the bowl aside.  Sift the dry ingredients into a separate

bowl.  Using another smaller bowl cream the butter, sugar & egg.  Add

the butter mixture to the dry ingredients, mixing well then fold in the

date mixture.  Spoon into  a 9-inch cake pan & bake 45 to 50 minutes at

350 F or until a toothpick inserted in the center comes out clean. 

Meanwhile combine the topping ingredients:  brown sugar, cream &

butter in a sauce pan, bring to a boil & cook for 3 minutes.  Time this

so that you finish making the topping as the cake is removed from

the oven & allowed to cool slightly.  Pour the topping over the warm

cake.

SERVINGS:  1 9-inch cake        TIME:  1 hour 20 minutes

ADULT SUPERVISION:  Teens should have little problem preparing

this cake, however, chopping dates & nuts might present a safety

hazard so you might consider purchasing products already chopped. 

Any time you work with hot water or stoves adults should be present

& supervise.
