CAT LITTER CASSEROLE

TOOLS YOU WILL NEED:  Plastic kitchen gloves (recommended), large mixing bowl, deep dish baking pan, measuring cup, measuring spoons, large wooden mixing spoon, 3 quart sauce pan with lid.

INGREDIENTS:

1 cup Bisquick

1 cup shredded cheddar cheese

1 LB ground beef (or you can use ground turkey or sausage)

2 cups long grain rice

bullet

3 3/4 cups water

bullet

2 tsp salt

bullet

2 Tbsp butter or margarine

DIRECTIONS:  First make the "cat dumps" by preheating the oven to 350 F.  Using clean hands (gloves are recommended), mix together the bisquick, cheese & ground meat in a large bowl.  Mold pieces of the mixture into various sizes & shapes "dumps" then place them on an ungreased baking pan so they do not touch each other.  Bake for 20 minutes or until they are all brown, firm & slightly crusty.  While the meat cooks put all the remaining ingredients into a large saucepan.  Heat on high until the water comes to a boil; stir & reduce heat to low, cover & simmer without lifting the cover for 14 minutes.  Remove the saucepan from the stove & carefully lift off the cover.  Break apart or fluff the rice with a fork & set pan aside.  When dumps are done carefully transfer them onto paper towels to drain.  Spoon the rice & dumps into the now empty baking pan, leaving some dumps partially uncovered (the way kitty does when he/she is in a hurry.  Return to the oven & bake uncovered 3 to 5 minutes or until meat is reheated.  Do not over cook or the rice will be dry.

SERVINGS:  4 to 6                                            TIME:  30 minutes

SERVING TIPS:  If casserole appears dry add a small amount of water before the final bake period.  If using ground turkey try using low fat chicken broth instead of water.
