BACON VINAIGRETTE PRINT

TOOLS YOU WILL NEED:  Skillet or fry pan to cook bacon, knife for

 cutting, paper towels, measuring spoons & cup, spatula, bowl or jar to hold

 finished dressing.

INGREDIENTS: 

  • 6 slices bacon

  • 1 small onion, minced

  • 3 cloves garlic, minced

  • 4 Tbsp white wine vinegar

  • 1/4 cup lemon juice

  • 1 tsp sugar

  • 3 Tbsp Dijon mustard

  • 1/4 cup finely chopped cilantro

  • 1/2 cup olive oil

  • Salt & pepper to taste

  • 1 or 2 chopped anchovies, optional

DIRECTIONS:  Fry bacon until crisp & drain on paper towel, cool &

 crumble.  Remove all but 2 Tbsp drippings then sauté onion until translucent,

 add the garlic & anchovies cooking for 1 min.  Add vinegar, lemon juice, 

sugar, mustard & cilantro heating about 1 min.  Add olive oil & bacon, stir

 & heat.  Salt & pepper to taste.  Use while warm.

SERVINGS:  about 1/4 cup                       TIME:  15 min

SERVING TIPS: Use on potato, macaroni salad or slaw instead of

mayonnaise based dressing.  Also great on sandwiches or any other use

 where salad dressing is used.
